CC as you got your iMac Pro about the same time I got mine I was wondering if you have locked down on a OS version yet? I am thinking that maybe Big Sur maybe the place to stop - would appreciate your thoughts/experience.

With what you have said your needs are the ‘midrange’ mini should be fine. But why not try it for yourself by taking advantage of Apple’s return policies?
