I suppose I would expect any power supply in sensitive equiptment to have surge protection built in, this is why you have to be careful not to PAT test with high voltages.
Also, If I cared enough I would put surge protection in the consumer unit at home.

Yes, the RME is overkill unless it also replaces the external USB interface. That might be technically possible but an interface with XLR/jack sockets etc. is a bit more user friendly than a PCIe card with breakout cables.

SPDIF is stereo only - it won't carry surround. That's a pity, so the RME can't do what my existing card does but then it would not be a feature to expect on such a card. You will know if it is working because the liquid surface generally ripples and a simple test is to put a tarnished silver spoon in there and check after a few mins that it's clean. I suppose a transducer is the way to go, although when I looked at those it was not clear which ones generate sound as opposed to detect it. Or just hack a bat detector, you even get cheap kits that must have sensors/microphones in them. A measurement microphone that goes to 50KHz is pretty expensiv...
