If you start with a good room, and a good instrument, and a good player, then you choose your mic position carefully, and choose the right mic for the job, and you capture a good performance onto your medium of choice ...

I would recommend the Neumann KH80dsp or KH120’s if the Eris sounds too bass heavy in your untreated room. I have the KH120’s and love them. Nothing wrong with that. But bass in your life comes at a price. It requires a big enough room with sufficient acoustic treatment to keep it under control and tame it's excesses. Sonarworks definitely works for headphones, I've not tried the room correction side but it can't fundamentally break the laws of physics - so it'll work better in a treated room but if you've got large bass standing waves (which in an untreated room you will have) then it really can't sort that out ...
