Does anyone else think that it would be a good idea to check all of the capacitors in-situ with an ESR meter before swapping them? It might save a great deal of time, and the associated risk of introducing further faults.

This should be investigated and fixed immediately, although not fatal "in most cases" it's very unpleasant and could be indicative of dangerous faults somewhere in your mains wiring. One more thing to try if the above doesn't sort the problem. It's possible that there might be something loose that's vibrating in tune with the G string. Try playing it without an amplifier, and see if you can hear anything odd.
