When I had a similar issue a few years ago, I grounded the audio interface by plugging a guitar cable into one of its spare inputs, and the other end into a real guitar amplifier. It might be worth trying this, if only to eliminate it from the many possibilities.

Yes, you are correct. I just tried creating a buzz with my Stratocaster and the SPL meter wasn't really showing much difference.

I wonder if there would be any benefit in using an SPL meter to measure the level of hum? This would give a consistent reference to see if any improvement is made.

I agree with everyone else. Garageband is excellent. For travelling, I would also add the smallest and lightest Bluetooth midi keyboard that I could find. Mini keys may not suit accomplished pianists, but they are a great deal better than no keys. Bluetooth saves you messing about with Lightning to ...

A lot of good advice there and nothing to argue with. As several people have said, a refurbished business computer is a good way to go in the UK. The reference to "Bestbuy" suggests that the OP may be in the USA. Hopefully the same applies there.

I have to admit that I don't know. However, it is certainly possible. This website makes a decent stab at it most of the time, even with songs that it has no stored record of, though it does struggle with timing if there are other than 4 or 3 beats to the bar:
