I know how to select two separate channels to be armed for recording but I cannot work out how to trigger more than one channel at the same time.
If you want to ply multiple clips you simply press the play button at the end of the line to the far right. But how do you record start multiple clips?

If you are multi-track recording in Session view, make sure “Start Recording on Scene Launch” is selected in the Preferences (under Record / Warp / Launch). That way you just have to arm the right tracks and trigger a scene to start recording clips in all tracks.

For instance - arm two channels - the square clip icons turn to circles on the armed channels. Select two clip slots, one on each armed channel, and hit return. If Live is playing, it will start recording in those two clip slots.
If it's not playing, Live will start playing and recording into those clip slots.
You should be able to trigger recording in many of the same ways as you can trigger clip playback - but the method I described is nice and simple.
"Arm exclusive" should of course be off so you can record-enable more than one channel.
