Tripping over the various cables that tend to get strewn about.

concussion from falling mics on high stands.
electrocution due to poor maintenance or pure ignorance.
tripping over mic stand legs, awkwardly propped up guitars, drum kits etc.
back injuries due to trying to move double stacked 4x12 cabs and pianos on your own.
impalement on boom arms when asking for more snare.
loosing ones fingers to an expertly wielded stanley knife when attempting the solo you can't play for the 40th time.
injuries sustained from flying drum sticks.
pony tail trapped in reel to reel tape machine.
hearing damage
cuts from tape splicing equipment
burns from soldering irons
some but by no means all the above may not be entirely serious suggestions

Not forgetting having the owner's rottweilers set on you when you fail to pay the bill on time...

Not if they are properly trained and are accredited to the new industry standard outlined in HSE guidance document 542.1 "Provision of Comestibles in a Recording Environment".
I believe one of two of the Music Technolgy colleges are now including basic tea and coffee making skills with the associated risk assessments in their flagship courses.

In Hip Hop studios, being shot to death.
Also, being robbed at gunpoint/knifepoint.
And drugs and alcohol.
Otherwise, deafness and death by electrocution would be the two health and safety hazards I'd watch out for.
