Okay... I know this sounds like it shouldn't be possible, but I have experienced bad VSTi sound whenever my VSTi is configured to listen all MIDI channels from my master keyboard.
Although I can't figure out why, there is a huge difference when I configure my virtual instrument(s) to listen on all midi channels vs a single channel. The sounds because 'bleak' and for example Keyscape sounds like a toy piano. If I then change the config to a single MIDI channel it sounds like it should.

Likely this is because you have multiple channels playing the same note, and these duplicate notes result in phase cancellation.

Can you explain that a bit further? For example, I have a Roland Fantom, sending MIDI out over all channels, and in my DAW I have a single MIDI channel configured with a single VSTi.
Are you saying I should limit the Fantom MIDI out to only send on one channel?

No, I'm not suggesting anything. I can't suggest a cure, since I don't know what the illness is.
Based on what you've said I would hazard a guess that two identical notes are being played by the receiver and that is why it sounds strange.
As to why... that's something you are going to have to try to track down methodically. A MIDI monitor is always a good idea in these circumstances - see what the instrument that sounds odd is actually receiving.

That's precisely the reason I suggested Arpangel try panning a mono-source, to ascertain if there were some phase-reversed multichannel action in play due to running in and out via ADAT.
