Ok, this may just be a "but the right kit" kinda question but I'm hoping you folks can help.
I'm working on a live theatre performance that is also a live streamed piece for video. So I need to simultaneously mix the audio separately for the 2 different use cases.
ie. The correct mic/backing track level for the live performance in the theatre space will not be the same as what is required for the live stream.
Well I need to split all of the sources and send them to 2 different mixing desks, or is there equipment that will allow me to produce multiple mixes from the same sources?
This is really difficult to Google since it's such a specific use case. So thanks in advance for the help.

What is the main desk? If it's something digital (an on many larger analogue desks) you can route the inputs to multiple channels so that you can create two separate mixes and send them to different output pairs.

There are a few ways to tackle it. The approach above may be an option, matrix mixes can also a good way to do this sort of thing of they're available.
As Sam says, it depends on the console you're using, and the complexity of the mix will have an influence on the most elegant solution as well.

There are lots of ways to do it, and none are that difficult.
Almost all desks allow multiple mixes; that's one of their basic functions.
How may inputs are you controlling, what gear do you have already, do you need automation, and do you have a budget?

I've done the 'two mixes at the same time' caper more times than i could remember.
Unless it's really simple stuff, then I'd recommend a two-person operation - ideally on separate mixers. Sure it can be done by one person on one mixer, but for anything than really basic stuff needs a lot of concentration and slip-ups are too easy. I found that I never gave either mix the attention it deserved.
You'll let us know what mixer you're contemplating using, but the EQ for live will almost certainly be different to that required for the stream. Not insurmountably on one mixer if you have enough channels, but...
