I just realised that I have a demo project of 'Colors' by Beck on my version of Logic 10.4.8
Are there more of these well produced commercially released projects available for download?

I would do an internet search for Logic demos or Logic tutorials or Logic midi files.
I remember I needed to mock up a style of music that I wasn’t very good at and I found sites that had midi files available for download. Even though they weren’t specifically made for Logic the Import in Logic did a good job of bringing in the important tracks that I then assigned to instruments of my choice.

Yes, Logic has shipped with various commercial demo demo projects from people like Beck, Foster The People, Billy Eilish, Lil Nas X and others, which are available in Logic for a time during the lifecycle of that version.
After a while, usually a year or two, they tend to get removed as per the licensing agreements with the labels that supply the material - for example, the Billy Eilish track Ocean Eyes is no longer available to download in Logic, it was removed late last year.
If you had previously download one of these projects, it might still be on your system at
/Library/Application Support/Logic/Logic Pro X Demo Songs/
If you didn't, there's no legal way to obtain them as Apple's distribution rights for that material have expired, and being copyright material, can't be shared.
(With an old 10.4.x version of Logic, you wouldn't be able to load the projects that came with Logic 10.5 or newer anyway...)

Given that these demos were almost certainly not originally recorded with all stock Logic plugins (or even, probably on logic) I’ve wondered if the original production team reworked them, or some Apple staffer in a basement somewhere gets to pour through multitracks and do the remix.
