I haven't got the headphones out, it's late in the evening and Mrs Endi is in a call, so I haven't had the chance to give it a proper good go, but switching to WASAPI Exclusive mode is looking promising.
I'll play around with the buffers as well!

OK! I didn't want to wait, so I got the Cochlear Mini Mic out (which can stream headphone output audio straight to my implant wirelessly).
With WASAPI enabled, and adjusting the buffer to that sweet spot now gives no distortion, no stuttering, no pops or etc even with Jamstix and all the drum VSTIs enabled. No need to freeze anymore, but that will be revisited as more tracks are added.
Thanks to all who replied, there was a positive outcome!

That's good to hear. No pun intended for obvious reasons.
